Today has been great fun for me because not only did I bake some wholemeal bread (healthy eating at its finest, people!) but I also made my first ever pizzas!! One of them was red cheddar and tomato (classic margherita) and the other was red cheddar, tomato and beef (I might name it the Beefy Briggs if it hasn't already got a name!), so that was fun. It was a little nerve-wracking because dough is my absolute nightmare, but it went well and tasted nice so I can't complain! At least I can now make pizza, so if all else fails that can be my staple dish.
I love baking these days, although I never used to like it. When I was younger I used to think baking was for people who had no job and no life - or too much time on their hands! - but now that I've become more health conscious it's become a massive part of my life. It only really kicked off in second year, when my partner and I discovered that I had a knack for producing cakes (guess whose idea that was!) and after that it was pretty much game over. Nowadays I like baking cakes and bread - bread is my absolute favourite because I know exactly what goes into it and it saves on buying shop-bought bread with all the additives and so forth.
I quite like making cakes, although the sugar content makes me do a double-take every time I see it! I try to make healthy cakes - so I use dark sugar instead of white sugar, or I do half quantities, or I just halve the 'naughty' things like cream, sugar etc. Once I learn how to make pastry I can make pies which will be a lot healthier - fruit pies, savoury pies etc - but I will probably buy shop-bought pastry first because making pastry requires a bit more patience than what I have right now! That and more space, which we won't get until we move house in July.
Jonathan and I have also taken the rather large step of asking for information about the adoption process. As I was adopted, my one driving force has been to give a child the second chance that I had 19 years ago. We're probably not going to kick things off until September because of all the hassle we have before then - graduation in July, moving in July, hen and bachelor do in August, getting married in August and then going on honeymoon in August! Of course if I get on the postgraduate course that I want to get on, then I will be juggling adoption proceedings with a postgraduate qualification, but insha'Allah it will work.
I'm still not sure about what I will do regarding Islam, but I think if I take each day as it comes that will keep me sane for a while. Right now I have a nasheed to write, a dissertation to write and edit ... and in between all that I have to plan my wedding! Once we get into April I will be incredibly happy because most of the work will be over and done with and I just have my History exam followed by graduation .... eeek!!!
