My dad and I tried this recipe after watching this on TV. It was so yummy that I swooned. We had this served during Sunday lunch and everybody in the family loved it.

Cucumber and Tuna Salad

Ingredients:

2 medium sized cucumbers

2 155gms Tuna flakes in oil or in water, drained

1/4 cup low fat mayo

1 tsp ground black pepper

2 Tbsp Salt

2 Tbsp lemon juice

1 tsp sesame oil (optional)

Directions:

Slice cucumbers thinly and place in bowl. Mix in salt and set aside for 10 minutes. The salt will draw out water from the cucumber. After ten minutes, place cucumbers in cheesecloth and wring out excess water. Do not wring to hard, though. We dont want to lose the cucumber's crispiness. In a clean bowl, combine cucumbers, tuna, mayo, black pepper, lemon juice and sesame oil. Mix well.

This salad is best served cold or at room temperature.
