This is a simple recipe I would like to share. I made this with my aunt three or so years ago as snacks for the family. Ground beef and pork is expensive. Tomato sauce is expensive as well. There wasn't much in the pantry--only a few cans of tuna. So we thought: Why not make pasta with tuna?

PASTA A LA POBRE

 

Ingredients:

250gms pasta of choice.

2 200gms canned tuna in vegetable oil.

1 shallot, minced

2 cloves garlic, minced

1-2 tsp. soy sauce

1/2 tsp. ground black pepper

1 Tbsp. butter (optional)

1/2 cup chopped basil

1/4 cup ground Parmesan cheese

1 Bay leaf, dry

 

Directions:

 

Cook pasta as directed on box. Drain and set aside. On a nonstick pan, sauté shallot and garlic in butter and the oil of the canned tuna until shallot is translucent. Add soy sauce, bayleaf, and tuna and let cook for five to ten minutes. Season with black pepper. After seasoning, turn off flame and add cooked pasta. Mix well. Garnish with basil leaves and Parmesan cheese.

Makes 2-4 servings
